Over the years I've been asked at least 6 times if I can make a gluten free Battenberg cake.

The answer is "yes I could, but I'd rather run with the Battenberg theme and create an absolutely spectacular blondie instead".

So that's what I've done - our classic blondie, studded with marzipan pieces and swirled with a little hint of apricot jam. Delicious!
