I've never had a cornflake tart, but the idea of crunchy, caramel cornflakes and tangy raspberry jam has always sounded like a winner to me.

I decided the best way to recreate the flavour was to pop some cornflake topping onto one of our blondies. Soft, fudgey blondie, swirled with raspberry jam and topped with a crunchy, chocolatey cornflake topping.
